Mexican Meatloaf

1 to 1 1/3 lbs. of Ground Beef

2 tbsp. Taco Seasoning or 1 package of seasoning

2 Eggs

3/4 c. Milk

1/2 c. Salsa

1 c. Crushed Tortilla Chips (could use corn chips but they are too oily for me.)

Mix all the ingredients together and put into a 9×5 loaf pan. Crush a handful of tortilla chips and top meat mixture with the chips. Bake at 350 degrees for 1 to 1 1/2 hours. Remove from oven and turn over onto cookie sheet. Spread another 1/3 c. salsa over meatloaf and then top that with 3/4c. cheddar cheese. Put back in oven until cheese melts. The tortilla chips should be on the bottom. (If you want it to be a little spicy add a little extra pepper.)
